Mushroom Briyani
Briyani’s are every one’s favourite. Till now I have never seen anyone who says ‘ I don’t like briyani’.Though I thought of uploading chicken dum briyani first, I shoot this video when I bought some Fresh Mushrooms. So here are the ingredients.

Ingredients
To Grind
Ginger – 2 Inch size
Garlic – 5 pods
Curry leaves – 1 sprig
Corianer leaves – 3 tbsp chopped
Pearl onion – 5
To make briyani:
Ghee – 1 tbsp
Oil – 2 tbsp
Basmati rice – ¾ cup
Water – 1 and ¼ cup [ to cook
basmati rice]
Cinnamon stick – 2 inch size
Cloves – 4
Cardamom – 1
Star anise – 1
Bay leaf – 2
Fennel seeds – ½ tsp
Curry leaves – 1 sprig
Onion – ½ cup ct into length wise
Tomato – ½ chopped
Button Mushroom – 12 [ water and cut them into slices ]
Coriander and mint leaves – 3 tbsp chopped
Cashew nuts – 7-8
Salt to taste.
Masala Powders
Coriander powder – ¾ tbsp
Cuminpowder – ¾ tbsp
Red chilli powder – ½ tbsp
Briyani masala powder or garam masala powder – 2 tbp
Method
Soak basmati rice in water for 30 minutes after washed thoroughly.
Blend ingredients listed under ‘to grind’ to make paste.
Heat pan on the stove, add ghee and oil. Once hot add, cinnamon,cloves,cardamom,star anise.
Fry till aroma comes, then add bay leafand fennel seeds.
Add onion,curry leaves and fry till light brown and add ground paste and tomato.
Give it a mix and cook till raw flavor goes.
Add all masala powders listed under masala powder and mushroom with little water.
Stir well and add salt. Cook for two minutes.
Mean while add soaked rice into pressure cookware and add the prepared gravy.
Add coriander and mint leaves and cashews. Check for salt.
Salt should be slightly extra so that they would be absorbed by rice once cooked completely. Don’t add a lot. While you taste it should be slightly bitter.
Wait till it starts to boil. Then cover with lid and pressure cook for 1 whistle.
After one whistle reduce the flame to very low and allow the cookware to sit for 5 minutes.
Now switch off the flame and once the pressure completely down serve it with onion raita.
