Schezwan sauce – Indo –Chinese recipe
Schezwan sauce is an Indo-Chinese sauce made with chilli and garlic which is very spicy sauce. There are so many varities of Indo-chinese recipes we can make with schezwan sauce like noodles,rice,paneer,potato etc. we will see all those spicy mouth watering recipes in next coming episodes. Before that we have to learn how to make this sauce .So here is the method with video description.

Ingredients
Oil | 3 tbsp | எண்ணெய் |
Garlic | 2tbsp finely chopped | பூண்டு |
Ginger | 1 tbsp finely chopped | இஞ்சி |
Spring onion | 1 finely chopped | வெங்காய தாழ் |
Red chilli | 10 | சிவப்பு மிளகாய் |
Pepper powder | 1 tsp | மிளகு தூள் |
Vinegar | 2tsp | Vinegar |
Soy sauce | 1 /2 tsp | சோயா சாஸ் |
Salt | To taste | உப்பு |
Sugar | 1 tsp | சர்க்கரை |
Tomato ketchup | 1 tbsp | தக்காளி கெட்ச்அப் |
Method
Soak red chilli in water for 5 hours. You may remove seeds if you don’t want it to be very spicy. Other wise grind them into smooth paste and keep it ready.
Heat oil in a pan, add garlic and ginger and sauté till golden brown.
Add spring onion and fry for 1 minute.
Add groud chilli paste, soy sauce, vinegar,pepper powder. Mix it well.
Add Salt and sugar and cook for 10 minutes till oil seperates.
Finally add tomato ketchup and mix it well. Tomato ketchup gives saucy consistency and mild sourness that compensate strong spicyness of chilli.
Transfer into air tight containers and use while making any kind of schezwan recipes.
