Pearl Millet cooler drink or Kambu Khool


Pearl millet or bajra is traditional Indian grain which are rich in fibre,calcium and other essential nutrients that human body needs every day. It is gluten free as well and great for stomach ulcer and weight loss. 

In north, it is prepared as roti , But in south, especially in tamilnadu we make it into cooler drink during summer season and it is great along with raw mango with a dash of red chilli and salt.

Ingredients  [தேவையான பொருட்கள் ]
Pearl millet [bajra ]
½ cup
கம்பு

Yogurt
3 tbsp
தயிர்

Water
1 cup
தண்ணீர் -

Salt
To taste
உப்பு

Onion
1 finely chopped
வெங்காயம்

Green chilli
1 FC [Deseeded]
பச்சை மிளகாய்

Curry leaves
1 spring FC
கருவேப்பிலை

Raw mango
¼ part FC
மாங்காய்

Kambu khozh
Method
Add bajra into blender and pulse for 5 to 6 times till they are coarse.
Add coarsely ground bajra into pressure cooker with 2 cups water and pressure cook for three whistles.
Once the pressure is down, transfer into separate bowl and allow to cool down then refridgerate.
While serving,  cream yogurt nicely, add salt and water to make buttermilk.
Add cooked bajra,onion,curry leaves. Green chilli and mango chopped finely into buttermilk and mix until well combined and serve.
When you are back from hot sun, this really taste like a heaven.
