south Indian sambar
Sambar is a famous traditional lentil curry cooked with
vegetables, tamarind water and Indian spice powder. It is great condiment
particular serve as side dish with south Indian breakfast and meals. With out
sambar none of the south Indian dish is complete.

Ingredients
Toor dal – ¾ cup
Tamarind – ½ amla size
Pearl onion – 10 [Cut into two pieces]
Tomato – 1 [cut into cubes]
Sambar powder – 1 ½ tbsp
Turmeric
Drumstick – 2 [ cut into length wise]
Carrot – 1[ cut into circles]
Tip : You could also use any vegetables of your choice like lady’s
finger [okra or bhindi] , potato, white pumpkin, brinjal , mango.
Oil – 1 tbsp
Salt to your taste
For Seasoning
Oil – 1 tbsp
Mustard seeds – ½ tsp
Fenu greek seeds – ½ tsp
Curry leaves – 1 spring
Garlic – 1 [ crushed]
Hing – a pinch
Red chilli – 1
Method
Pressure cook your toor dal with salt and turmeric and mash it well with
wood masher and keep it aside.
Soak the tamarind in water for 15 minutes and strain out the tamarind
water.
Cook your vegetables and keep aside.
Place pan on your stove and add 1 tbsp oil. Once it is hot add pearl
onion and saute for 2 minutes .
Add tomato and turmeric and saute for another 2 minutes.
Add cooked vegetables, sambar powder and mix them well combined.
Allow the veggies to cook with sambar powder for 2 minutes.
Now add in the cooked toor dal and required water if it is thick and
cook for 2 minutes.
Once the dal started to boil add in the tamarind juice and let the
sambar to cook for another 5 minutes.
After 5 minues, reduce the flame to very low and start preparing
seasoning
For that, place seasoning pan on your stove and add 1 tbsp oil.
Once it is hot add mustard seeds and allow it to pop up.
Add fennel seeds and carefully saute them for just 4 seconds. Make sure
it is not get burned. Then it will give bitter taste.
Now add in your curry leaves, crushed garlic. Red chilli and hing and
fry for another 1 minutes till the raw flavour of garlic goes away and curry
leaves are fried well.
Now transfer the seasoning into the sambar, mix it well and close it
with cover for 2 minutes. This helps to incorporate the flavour of seasoning
well with your sambar. Switch off the flame.
Now your delicious nad tasty south Indian Sambar is ready to serve.
You could enjoy this with south Indian breakfast like Idli, dosa,
paniyaram, uttapam and even with hot steam rice as lunch.
