Sweet boondi  or boondi  ladoo

Ladoos are very famous Indian festive sweet made up of gram flour. They looks like small balls and soaked in sugar syrup . Absolutely great  to prepare during festive season.

Ingredients
Besan flour – ¾
Water – ¼ cup
Baking soda – a pinch
Salt – A pinch
Ghee – 1 tbsp
Almonds – 7
Cashew nuts – 7
Oil  for frying – 600 ml
Sugar syrup
Sugar – ¾ cup
Water – ¼ cup
Lemon juice – 1 tbsp
Cardamom – 2 freshly crushed.
Important utensils to make Ladoo is Ladoo ladle – Ladle with small holes in it
Method
In a seasoning pan, add ghee. Once it melts, add cashew nuts and almonds [ cut then into small pieces ] . Fry in a low flame till they are golden brown and transfer into another bowl. Keep it aside.

Sieve the besan [gram flour], salt, baking soda to avoid any lumps and add water little by little to make smooth batter. Use a whisk or spatula to mix batter. There should not be any lumps in it.
Then add 1 tbsp oil to it, give it a mix and rest this batter for 15 minutes.
Your batter should not be watery or thick. It should be in medium consistency. To check, Pour spoonful of batter over the ladoo ladle and if it pass through it with small ball shapes [boondi shape], then it is right. For better understanding watch the video.
Sugar syrup

Place wide open vessel on the stove, add sugar and water and allow it to boil for 6 minutes. No thread consistency needed. Then add crushed cardamom and lemon juice. Switch off the flame and keep it aside.

Boondi making
Now in a kadai , add oil and allow it to get hot. The temperature of the oil should be medium. If it is high the boondi’s may get burned soon while frying as they are small in its size.
Now place the ladoo ladle over the oil and pour in the batter . To avoid sticking of boondi altogether , keep rotating the ladle so that the boondi’s will pass through in different places.
Fry them for just 1 minute. The colour should not be golden brown but should be yellow in colour. Make sure they are cooked well.  Then strain from oil and add to sugar syrup. Do the same with rest of the batter.

Let the boondi’s to soak in sugar syrup for 2 hours at least. Then add ghee roasted cashew nuts and almonds and mix it well and your sweet bonndi’s are done. You could serve them as sweet boondi’s or as boondi ladoos as per your choice.
To make boondi ladoo’s,  apply oil or ghee on both of your palm and take small amount of boondi’s and form them into small thumblings.
