Uttappam [Soft and Thick dosa]

Uttappam is a famous south Indian breakfast recipe. It is a kind of dosa with  thick and soft texture. There are so many varieties of uttapam like onion uttapam,veg uttappam,pizza uttappam etc. Will post all those in the next coming weeks.Today We will see how to make three varieties of basic uttapam.

Ingredients
Idli rice – 3 cups
Urad dal – ¾ cup
Fenugreek seeds – 3 tbsp
Oil – 2 tsp
Ghee – 2 tsp
Onion – 1 finely chopped

Method:
Uttappam batter :
Soak idli rice,urad dal, fenugreek seeds for 4 hours and grind it to nice batter using wet grinder or blender.
Ferment the batter for 8 hours in a warm place.
After 8 hours the batter must have been raised double in its volume.
Mix it well,add salt to your taste.
Note: This batter can be used to make idli,dosa, panniyaram etc.

Simple uttapam
Preheat your tawa on stove. Pour ½ cup batter on to it and slightly spread. Dont spread thin like dosa. You have to spread half of your tawa. Drizzle 1 tsp oil at the edges. Cook till you see small holes appears on it top. Now turn it to other side and cook till the uttapam turns light brown.Transfer to the plate and do the same for more uttappam

Ghee uttapam
Preheat your tawa on stove. Pour ½ cup batter on to it and slightly spread half of your tawa. Now drizzle ghee at the edges,close it with lid and reduce your flame to low and cook for atleast 2 minutes.
Note: The bottom part should cook with tawa heat and the upper part should cook with steam produced by the closed lid.
Now  insert toothpick into it and if it comes out clean it is done. Transfer it to plate and enjoy woth your favourite side dish.

Onion uttappam

Preheat your tawa on stove. Pour ½ cup batter on to it and slightly spread half of your tawa. Sprinkle the chopped onion over the batter without any cap. More onion more taste. Drizzle some oil at edges and over the onion,cook till the down part turns golden brown. Now flip it to another side,cook till u get nice aroma of cooked onion or the onion turns thick golden brown. Transfer it to plate and enjoy with your family.
