Tomato chutney
Tomato
chutney is a famous south Indian accompaniment for Idli, Dosa, paniyaram,
utthapam rava dosa, adai etc. It is a kind of spicy and tangy sauce in which
tomato, onion are sauted in oil and seasoned with mustard and other Indian dry
spices
Ingredients:
Oil – 1 Tbsp
Garlic –
3 gloves
Ginger – ½
inch piece
Onion – 1
[cut into cubes]
Tomato –
2 [cut into cubes]
Fresh
coconut – ¼ cup [grated]
Red
chilli – 1 [
Salt to
taste
For Seasoning
Oil – 2 tsp
Mustard seeds
– ½ tsp
Channa dal
– ½ tsp
Hing – 1 pinch
Curry leaves
– 1 spring
Method
Place
kadai on your stove,add oil
Once it
is hot, add red chilli, garlic, ginger and saute for 1 minute.
Then add
onion,tomato and salt to your taste. Close it with lid and cook for 7 minutes
till onions are transparent and tomatoes are cooked well.
After 7
minutes of cooking , check the consistency of the cooked mixture and if it is watery
,cook for another 2 minutes or so ..
Finally
add the coconut and mix it well.
Transfer
the content into another plate, allow it to cool down and blend it to nice
paste.
For
seasoning, add oil to seasoning pan. Once it is hot ad d mustard seeds and
allow it to pop up completely.
Then add
channe dal and fry it golden brown.
Now add
hing and curry leaves and saute till you get nice aroma of all the ingredients.
Transfer
themixture immediately into the chutney, cover it with lid for 1 minutes
This
helps to retain the flavour of mustard seeds, channa dal and curry leaves to
stay inside the chutney that way your
chutney would taste amazing in each bite.
Serve it
with dosa, idli, paniyaram,rava dosa,adai, uttapam etc.
