Indian sweet dessert
Gulab
jamuns are Famous Indian sweet dessert in which milk powder mixed with
sooji and maida and made to soft dough,fried in oil and soaked in sugar syrup.
Occasionally served on festive season.But dont wait for any festival or
function.You can prepare right now and enjoy its unbelivieable taste
Ingredients
For Gulab jamuns
Milk powder – 1 ½ cup
Maida – 2 tbsp
Rava or sooji – 2 tbsp
Baking powder – ½ tsp
Lemon juice – 1 tbsp
Ghee – 2 tbsp
Warm milk or water – ¼ cup
Oil for frying jamuns
For sugar syrup
Sugar – 2 ½ cups
Water – 2 cups
Cardamom – 2 crushed
Lemon juice – ½ tsp
Rose essence (optional)
Method
Sugar syrup
Place wide opened big vessel on the
stove and add in water and sugar syrup. Simmer the flame to low and boil
the mixture for 10 minutes.
After 10 minutes add in cardamom seeds
crushed,rose essence and lemon juice into it
Switch off the flame and keep it aside.
Lemon juice helps in preventing the
sugar syrup from being crystallized.
After you rolled all dough into
thumblings, fry them in oil till they are golden brown.
Note:Make sure that your vessel is big
enough to accomodate the jamuns as the jamuns would double in its volume after
soak them in sugar syrup.
Jamun preparation
In a mixing bowl add milk powder,sooji
[rava], maida [All purpose flour],baking powder,lemon juice and ghee.Crumble
[rub ]the mixture in between your palm so that all the ingredients would
bind well.
Now add in the warm milk or water and
make it to soft dough. Rest it for 10 minutes.
After 10 minutes, apply some ghee in
your palm, take small dough and roll it to thumblings.
Make sure the rolled thumblings are
even without any cracks.Make sure the oil is medium hot.
If it is too hot the thumblings may
crack and get dark soon with out cooking inside
.To check the oil temperature, add
little bit of dough into oil. If it stays at botton for 2 seconds and come up
that is the right temperature.
Once the thumblings are fried
well, transfer it into paper towel to absorb excess oil.Now add them into warm
sugar syrup and soak for 4 hours.
Note: Both sugar syrup and fried jamuns
should be hot or warm while adding them together. Dont let them to cool down.
After four hours of soaking, the jamuns
are ready to serve. Garnish it with dry nuts llike cashews,pistachios or
almonds along with sugar syrup
