Bitter gourd curry [Karela curry]

Bitter gourd curry is basically a curry sauce cooked with onion and tomato paste along with authentic Indian spices and fried bitter gourd. Try the way as i explained and I am sure you dont get any bitter taste in the curry.

Bitter gourd curry


To make onion paste
Onion – 2 cut into cubes
Tomato – 1 cut into cubes
Coconut – ¼ cup grated
Garlic – 3 gloves
Curry masala powder – 1 ½ tbsp
Oil- 2 tsp
To make bitter gourd curry
Oil – 3 tbsp
Mustard seeds – ½ tsp
Cumin – ½ tsp
Curry leaves – 1 spring
Bitter gourd – 1
Turmeric – 1 tsp
Tamarind - 1/4 lemon size [soak in water and take its juice]
Salt to taste 
coriander leaves for garnshing


Onion paste

In a kadai, add 1 table oil, onion,tomato,garlic and saute them for 8 minutes till onions are transparent and tomatoes are mashed well.
Afetr 8 minutes of sauting add in the coconut and curry masala powder,mix them well and let it to cool down.
Put it in blender and make fine paste out of it.

Bitter gourd curry

In a kadai, add 3 tbsp. Once it is hot, add mustard seeds and allow it to crackle.
Add curry leaves and bitter gourd and mix it well so that the oil should coat well.
Now add turmeric and salt. Mix it well and cook them it they turn golden brown and a bit crisp.
Add tamarind juice and cook for 1 minute.
Now add the grinded onion paste and ½ cup water, mix well.
Check for the salt and add to your taste.
Cook in medium flame for 10 to 25 minutes till the curry is thickened.
Finally garnish with coriander leaves and serve with hot steam rice along with papad .

Tip : If you are diet conscious and don’t want to deep fry the bitter gourd then Saok the sliced bitter gourd in butter milk for 15 minutes before cooking. It helps in remove the bitter taste atleast 60 – 70 %.
