Basundi is a famous north Indian dessert served occasionally on function, festival, party etc...It is nothing but a milk reduced to half and flavoured with saffron , cardamom and arnished with cashews,almond and pisthachios. Could be taken as chilled and warmed.

Ingredients

Milk - 1 litre
Sugar - 1/4 cup
Cardamom seeds - 1 [freshly crushed]
Saffron strands - 8
Cashew nuts,pisthachios and almond - 1/4 cup [cut into small pieces]
Ghee - 2 tsp

 Place seasoning pan on your stove and add in ghee.

One it melts, add cashews,almonds and pisthachios and roast them till they are nice golden brown.

 Boil milk in thick bottomed non stick pan and simmer the flame and continue boiling milk for 15 to 20 minutes.
Make sure that you are scraping the sides of the pan to avoid sticking of the milk.
After 15 minutes, add in sugar,cardamom,saffronand dry nuts and mix them well.
Cook the mixture for another 5 minutes till it is thick and creamy.
After 5 minutes switch off the flame and let it to cool down.

Delicious basundi is ready. You could serve them warm or chill as per your choice.
