Ingredients
Raw Rice – ½ cup
Split moog dal – 4 tbsp
Water – 2 3/4 cup
Salt to taste
Ghee – ½ tsp
To temper
Ghee – 3 tbsp or 4 tbsp
Ginger – 1 tsp finely chopped
Red chilli – 1
Pepper corns – ½ tsp
Crushed pepper corns – 6
Cumin – ¾ tsp
Curry leaves – 2 sprig
Cashew nuts – 7 broken into half moon shape
Hing - ¼ tsp
Method
Dry roast rice and dal with ghee for 2-3 minutes till nice aroma comes out. Don’t need to wait till they turn into golden brown and all. Just dry roast for 2-3 minutes.
Transfer into pressure cookware with water. Soak for 20 minutes and pressure cook for 5 whistle.
Basically this pongal is made with slightly mushy consistency. That’s the reason we have added extra water and cooked for 5 whistles.
Once the pressure is down, transfer into mixing bowl and while it is hot, mash it slightly coarse using wooden masher.
Now Place pan on your stove and add ghee.
Once it melt, add ginger and fry till raw flavor goes. Add red chilli, pepper corns, crushed pepper, cumin. Hing, curry leaves and cashew nuts.
By the time cashews turn golden brown, cumin must have stopped crackling.
Immediately transfer it into the prepared rice and dal mixture and mix up well until well combined.
