Coconut chutney



Coconut chutney, most of us know how to make this chutney though I wanted to post it for the beginners who are all into cooking.

         


 I would say it is the world’s quickest recipe which can be made in 5 minutes with 10 ingredients and can be served with more than 10 Indian breakfast and dinner recipes. Whether it is south Indian dosa, idli, paniyaram, uthappam or north Indian roti chapatti or poori it taste great. 

Apart from main dishes it can also be served with bajji, bonda , methuvada and simply with white rice wow.. ! Its nice. So here is the recipe.

Ingredients :

For Grinding

Coconut – ½ cup freshly grated
Roasted chana dal – ¼ cup or ¼ cup – 1 tbsp.
Curry leaves -  4-5 leaves [ Note:  leaves not sprig]
Ginger – 1 tsp finely chopped
Green chilli – 1 [ Add more for spicy chutney]
Salt to taste.

To temper:
Oil – 1 tbsp
Mustard seeds – ½ tsp
Chana dal – 2 tsp
Hing [ asepotida ] – 1 pinch
Curry leaves – 2 sprig.

Method:

Grind all ingredients under ‘ to grind’ list using your blender into slightly coarse paste with ¼ cup water.
Tip : you could also add some coriander leaves for different flavor.
Transfer into bowl. If desired, add required amount of water to dilute the chutney.
Now in a seasoning pan, add oil, once it is hot add mustard seeds.
Once it crackled, add chana dal, hing and curry leaves and fry in low flame till curry leaves are crisp. Take care not to burn any ingredients.




Transfer into prepared chutney. Mix well and serve with any Indian recipes like Idli, Dosa, Paniyaram, utthapam, roti, chaoati,poori, varity rices like lemon rice, dal rice or simply with white rice also.

It can also be served with vadas,bonda and bajji.
