                                  Sooji Halwa or Rava Kesari



Sooji Halwa or Rava kesari, One of the easiest Indian Sweet which can be prepared in just 10 minutes. They Are such a delicious and one of my favorite sweet.







Whenever I feel like to eat some sweet, immediately I prepare this one. 

Also I am planning to post some high level Indian Sweet recipes like varities of ladoo, jangri, rasamalai,  rasagulla lot more. So thought of finishing off some basic &  easy sweet so that I could proceed with other sweet recipes. 

From my view, this rava kesari  and vermicelli payasam [kheer] are the most easiest and quickest sweet dessert which can be done under 10 minutes.

So today we will see how to make this easy sooji halwa.

Ingredients

Rava | sooji | Semolina – ½ cup
Sugar – 1/4 + 2 Tbsp spoon
Water – 250  ml
Ghee -1/4 cup
Cashew -  6-7 broken
Raisins – 7
Almonds – 5 [ grate or slice them ]
Ghee – 1 tbsp [ for frying cashews and raisins ]
Cardamom – 2 crushed
Orange or yellow food colour -  a pinch . [optional]

Method

Place pan on your stove and add ghee.
Once it melt add rava [ sooji ] and roast in low flame till you get nice aroma.

It will take 3-4 minutes.
After that you will notice the colour of sooji also changed into golden colour.
Now add water little by little by simultaneously stirring with spatula in other hand . This helps to avoid any lumps.
Add cardamom and food colour [if desired ] and stir well.


Allow rava to cook for 5 minutes till it get thickened and sooji is well cooked.
Mean while, in another small pan, add ghee – 1 tbsp  and add broken cashew.
Fry till golden brown and then add raisins and almonds.



Once raisins puffed up, immediately switch off the flame and the heat in ghee is more than enough to fry cashews and almonds further.
Add sugar to cooked rava and wait till it melts completely.
Add fried cashew , raisins and almonds. Mix well.Thats all !
Your delicious sooji halwa is ready to serve.
