[No oven ] Tandoori Paneer Pizza over stove top 

In my previous post , We saw pizza dough and pizza sauce recipe. As I mentioned earlier, in this post I am gonna share about making Tandoori Paneer pizza. You could also name this as paneer tikka pizza as well.  

There are two special things about this pizza . One is, it is spicy version pizza with Indian twist to double spice up your taste buds. Two,  I am going to show you guys how to bake it over stove top. So this is stove top Tandoori paneer pizza.

Those who owns oven could definitely bake it in an oven .But this post is special for those who don’t have oven at home. But there wont be so much difference in taste and texture.

Pizza dough  & Pizza sauce - For recipe Click this link


Olive oil – 1 tbsp
Mozzarella  cheese – 1 cup
To marinate paneer and capsicum:

Thick hung yogurt – 3 tbsp
Ginger garlic paste – 2 tsp
Coriander powder – ½ tsp
Cumin powder – ½ tsp
Pepper powder – ¼ tsp
Garam masala powder – ½ tsp
Red chilli powder – 1 tsp
Kasoori methi – 1 tsp
Onion – 1 cut into small cubes or pieces
Red and green capsicum – ½  portion [ cut into small cubes]
Paneer – ¾ cup
Salt to taste.

Method .

Stove top Baking :

Since we are going to bake it over stove top, only the base and cheese can be cooked. The topping need to be cooked separately.
So in a mixing bowl , add thick curd [yogurt], all masala powders, salt. Mix well without any lumps.
You will have thick masala paste. Now add onion,capsicum,paneer. Mix well until masala paste coat well with toppings. Add kasoori methi.
Mix well and cover with cling wrap and rest for 2 hours.
After 2 hours,  place tawa or pan on your stove and grease some oil. Add marinated paneer and capsicum pieces and start tawa fry them till they become light brown in colour. It would take around 4 minutes. Keep flipping the paneer and capsicum to avoid burning and also for even cooking.
Keep this ready.

Pizza baking.

Roll pizza dough into desired size and thickness. [1/2 “ thickness recommended ]
It is very important to use thick , heavy bottomed  non-stick pan to bake pizza for perfectly baked pizza with crispy texture with burned bottom.
Place pan over stove, and heat it till warm. Once it is warm, transfer into small burner. Don’t use big burner .
Now over your small burner ,  place griddle [ the one we use to make phulka ]. Over the griddle place warmed up pan. This griddle helps to protect pan from direct contact with flame. So your pan would maintained in warm to medium temperature though out the cooking process.
Grease pan with ovile oil and place rolled pizza base over it. Since we have used yeast, the base may puff up. So take fork and make small holes all over pizza base to avoid puffing. Cover it with lid and cook for just 1 minute.

After 1 minutes, your base must have got golden colour. Flip it to next side.

Now apply sauce, add topping and cheese very quickly and cover the lid cook for another 5 minutes.

Important :

# 1 From the time you flipped pizza base, you need to do next process of adding sauce,topping and cheese very quickly. Because we need the cheese to melt at the same time, your pizza base should not get burned or over cooked. 
Both pizza base and cheese have to be cooked perfect. So take care of this.

# 2 At any point of time, the pan temperature should not rise. It should always be maintained in warm to medium temperature to get perfect crispy texture and soft and juicy inside.

#3 Also cover with lid that helps in produce some extra heat inside pan sot that the inside of pizza base cook perfect and cheese also melt.

After five minutes of cooking, your pizza is ready. Cut and enjoy.

To bake in an Oven:

Preheat your oven at baking mode for 15 minutes at 220 degree C.
You may use pizza pan, pizza stone to bake pizza.
Now roll pizza dough, apply sauce, add topping, cheese. Also apply oil on edges to get golden crust.
Bow start baking till you see the top crust become golden in colour.

I usually bake by lining my baking tray with aluminum foil sheet. First 5 minutes I bake at bottom rack. Next 10 -12 minutes I bake in middle rack.
