Restuarant style Chicken 65

Chicken 65 which is spicy deep fried chicken and one of the famous recipe from south India. I have posted one more versioof making chicken 65 with crispy texture using bread crumbs

But this is restaurant style chicken 65 with fresh aromatic spices blend together with corn flour and gram flour, then deeps fried. Best recipe to prepare for guest arrival or as weekend special evening snack.

Ingredients

To blend
Cinnamon – 1 inch stick
Cloves – 2
Garlic – 5 pods
Ginger – 2 inch size
Curry leaves – 1sprigs.
Pepper powder – 1 tsp
Chilli powder – 2 tbsp [ use kashmiri chilli powder for vibrant red colour]
Corn flour – 3 tsp
Gram flour – 2 tsp
Salt to taste
Oil – ½ tsp
Water – 3 – 4 tbsp for grinding.

Other ingredients.
Chicken – 300 grams.
Egg white – ½ quantity white from 1 egg.[ optional but recommended ]
Oil – for deep frying

For garnish and serve.
Curry leaves – 2 sprigs.
Onion – 1
Lemon – ½

Method.
Cut chicken into small cube pieces and wash well with hot water and salt.
In a blender or mixer jar, add all ingredients listed under ‘ to grind ‘  and grind to get smooth paste.
Add this ground paste to chicken pieces and mix well until well combined.
Cover it with cling wrap and refrigerate for 1 hour.
You may refrigerate more than that . no probs.
But before start deep frying ensure u keep them in room temperature for 10-15 minutes.
Once it come to room temperature, add egg white. Though it is optional, it helps in coating the chicken well with masala paste.
Also adding egg white gives softy crisp texture for chicken.
Mix egg white with chicken and keep it ready.
Now heat oil in a kadai or pan and start adding chicken pieces one by one.
Flip in between to endure even cooking.
Once it turned golden brown, transfer into paper towel.

Now switch off the flame and to the same hot oil add 2 sprigs of curry leaves and fry till they are crisp.
While serving, garnish with fried curry leaves and enjoy with lemon and sliced onion.
