Mixed Veg korma for parata or roti,chapatti
Whenever I visit south Indian vegetarian restaurants I always wonder how they prepare the vegetable korma served with parata and chapatti. When you visit particularly ananda bhavan, saravana bhavan hotels, you will always find a unique flavor in the korma. I am great fan of that korma and finally I got the recipe to make from my mom. So try this korma for tonight dinner and I am sure you will not regret. They taste great and fabulous especially with parata, chapatti, roti etc.

Ingredients in TAMIL and ENGLISH

Red chilli powder

¼ cup grated

Cashew nut

Method
Heat pan, add Oil. Once it is hot add cinnamom, cloves,cardamom,star anise.
Once got nice aroma, add bay leaf and black stone flower. [ Take care they both get cooked soon. So keep flame low and before burning you have to add next ingredient immediately.]
Immediately add curry leaf, onion and cook till transparent.
Add tomato and turmeric and cook till mushy.
Add vegetables and salt with ½ cup water and cook till they are half cooked.
Mean while prepare coconut paste. In a blender add all ingredients listed under ‘Grind to paste’ with little water and grind them into smooth paste.
Now to the half cooked vegetables, add Ginger garlic paste, mix well and cook till raw flavor goes.[ for 2 minutes appx]
Add red chili powder, coriander powder, garam masala powder and ground coconut paste with 1 ½ cup of water. Give it a mix and add salt. Remember that we have added salt to veggies so add salt only to coconut paste and water we have added.
Cook till raw flavor goes for atleast 10 minutes and garnish with coriander leaves.
Serve with parata, roti, chapatti etc and enjoy.
