Ingredients

Besan or gram flour - 1 cup
Ghee - 3/4 cup
Oil - 1/4 cup
sugar - 1 cup
Lemon juice - 1/2 tbsp
Ghee - 1 tbsp for roasting gram flour
Aluminium or Non-stick tray greased with oil or ghee

Ingredients

Method

Grease the tray with ghee or oil before start preparing mysore pak. This helps to take out the mysore pak easily once it is cooled down.

Place pan on your stove, add 1 tbsp oil and dry roast gram flour for 3 minutes till you get nice aroma. Keeo the flame in low. Gram flour should not get change in its colour or burn.

Tranfer into a bowl.

Take another bowl with sieve over it. Sieve th roasted gram flour to avoid lumps.
Melt the ghee and add oil to it. Now you have 1 cup of ghee and oil mixture.

Take 1/4 cup of ghee and oil mixture seperate bowl and keep it aside.

Add remaining ghee and oil mixture into the roasted gram flour. Make smooth batter of pouring consistency without lumps and keep it aside.

Place Non-stick pan on your stove, add 1 cup sugar and 1/4 cup water. Dissolve the sugar completely and allow it to boil for 3 -4 minutes till you get one string consistency.

To check consisitency, take a drop of sugar syrup in your index finger and press it up with another finger and if you seperate you will see a thread forms.

Another way to check is take simgle drop of sugar syrup and drop into bowl of water. If syrup stays like solid without dissolving then it is in right consistency.

Reduce the flame to low.

Pour the gram flour batter that we prepared into the sugar syrup little by little by vigorously stirring with another hand using spatula or whisk. Stirring continuously is very important as this helps in  avoid lump formation.

After added all the batter now start pouring the remaining ghee and oil mixture that we kept separately add it little by little.this helps to avoid burning or sticking of gram flour.

Continue cooking for further 2 or 3 minutes till you closely at the bottom of the pan the mysore pak mixture has small hole like texture while you stirring. For betterunderstaning please watch the video.

Here is the pic of that small home like textuure.

Now you would also get nice aroma of mysore pak. Immediately transfer it into the greased tray and allow it to rest for 5 to 7 minutes till it is warm.

If you cooking your mysore pak may become harder and scrambled.

Once it is warm them into the desired shapes of your choice like rectangular or square or diamond shape.

Your delicious Mysore pak is ready in no time. So friends try this recipe and share how it turned out for you.
