Coconut - 2 inch square size
Raisins - 1/2 tbsp
Ghee - 2 tbsp
Method:
Place pan on your stove and dry roast moog dal for 2 minutes in a very low flame.
Once it turn into light brown, transfer it into pressure cooker. To this add raw rice and water.
Note: Pongal should be prepared in mushy consistency. So add 1/2 cup extra water to regular measurement you add to your rice. Since I have taken 3/4 cup of rice and dal instead of adding 1 and 1/2 cup water I have added 2 cups water. This 1/2 cup water helps to make the rice and dal mushy.
Soak rice and dal for 20 minutes and pressure cook for 4 visels.
Once pressure is completely down, mash the rice and dal with masher coarsely. Dont mash it like paste mash it coarsely and keep it aside.
Place pan on your stove and add jagerry, allow it to melt.Add 1/4 cup water and boil for 2 minutes till one string consistency.
To check consistency, drop jagerry into bowl with water. If it stays like ball without dissolving that is right consistency. Else take little jagerry in your finger, press with another finger and if you seperate you would see and string form in between your fingers.
For more detail watch video recipe.
Now add mashed rice and dal into jagerry. Mix it well.
Add milk and 1/4 cup water, mix well.Add cardamom powder and allow to cook for 2 minutes in low flame.
Meanwhile cut your coconut and dry nuts into small pieces.
Place seasoning pan on your stove, add ghee. Once it melts, add coconut and dry nuts and fry it they turns light brown. Then add raisins and fry till they puff up.
Once raisins are puffed up and dry nuts are golden brown immediately add it to cooked rice and dal mixture.Mix it well until well combined and your sweet pongal is done.Serve it hot and enjoy with your family.
Since it is made with jagerry, This sweet dish is very healthy too...
So you could also prepare this for your kids as we have added moog dal,dry nuts too...
