Homemade Paneer
Paneer is Indian cottage cheese made from milk by curdling it. It is mainly used in North Indian based dishes for cravies,sweets,fritters, appetizers etc.
Ingredients
Whole milk - 1 cup
Lemon juice or vineger - 2 tbsp
Ice cubes - 1 cup mixed with 1 litre water.
Method.
Arrangement
Take sauce pan which is big enough to hold one litre milk. Place sive ovver it and cover with cloth. Keep it aside.
Add Ice cubes to 1 litre water and keep it aside.
Paneer preparation
Boil Milk.
Once it is boiled, add lemon juice by straining with strainer to remove seeds.
Mix the milk and after 1 or 2 minutes the milk starts to curdle by seperating paneer on the top and whey water at bottom.
Immediately switch off the flame.If you boil the milk further the paneer may get hard.
Now transfer the curdle milk into sieve. Now paneer will settle on top and whey water passes through the sieve and filter in saucepan.
Take the paneer along with cloth. Add Ice cube water into a vessel and dip paneer wraped cloth inside. Press and squeeze for 1 or 2 minutes. This helps to soft paneer and remove lemon flavour.
Squeeze out the water completely. For that Place sieve over a bowl. Put paneer wraped cloth inside sieve and place any thing that weight around 2 kg [ I used stome masher or mortar] over for 1 hour.
If your paneer is crumbly and not binding well, add 1 teaspoon maida [all purpose flour] and knead the paneer for atleast 2 minutes. Now transfer it into round shaped or square shaped bowl.
Using your hand press it down to tighten the paneer inside the bowl. Cover it with cotton cloth. Place bowl over it which is perfectly fit into the paneer bowl.
The bottom of the bowl should touch the paneer surface. Place stone masher over the bowl and let it to sit for atleast 4 to 5 hours.
After 5 hours your paneer must be ready with perfect binding as we buy from stores.
