Cone Dosa or mountain dosa
Cone dosa or mountain dosa is a kind of rice
crepes, famous south Indian breakfast dish. Usually dosa are flat and circle in
its shape but when it comes to Cone dosa, the dosa will be in cone shape and it
always interesting to take some thing in different shape and surprise our
family by serving dishes in restaurant style. There is nothing would
make us excited other than make our family
or friends happy.
Ingredients :
Idli rice - 3 cups
Urad dal - 3/4 cup
Fenugreek seeds - 2 tbsp
Method.
Soak all the three ingredients in water for
about 3 hours, Grind them to fine batter with blender or wet grinder.
Ferment the batter for about 8 hours till the
batter rise double in its volume.
Now add salt to your taste andthe batter is
ready to make Dosa.
Pre heat your tawa on the stove. Now pour the batter onto the tawa
and spread it as thin as possible.
Your dosa should be thin enough to get it crisp. More thin more crisp.
If your dosa is crisp then only you can make cone dosa strongly ....LOL.....
Sprinkle 1 tsp of ghee or oil and allow the dosa to cook for 2 minutes
or till you see nice golden brown colour on the top.
If your dosa is thin enough you dont actually need to cook both side.
Coking one side is enoough and that way the dosa also very crisp.
After your dosa turns golden brown Reduce the flame to very low.
Take a sharp edge spatula. Starting from the mid point tar or cut
the dosa to one edge .
Now roll the dosa to cone shape and yur restuarant style cone dosa is
ready in minute.
