Egg Kothu parata
Kothu parata is a famous tamilnadu
street food in which paratas are cut into small pieces and cooked with onion,
tomato and Indian spice powders and serve with chicken, mutton or egg gravy.
Ingredients
Parata - 5 [cut them
into small pieces] use hand instead of scissors or knife.
Onion – 2 fiinely chopped
Tomato - 3 finely chopped
Curry leaves – 1 spring
Red chilli – 1
Oil – 4 tbsp
Mustard seeds – ½ tsp
Channa dal – ½ tsp
Fennel seeds – ½ tsp
Cumin seeds – ½ tsp
Turmeric powder – 1 tsp
Salt to taste
Egg -2
Garam masala – ½ tsp
Curry powder – 1 tbsp
Coriander leaves – for garnishing
Note – You could use mutton or chicken
or egg korma instead of spice powders[ garam masala and curry powder]
Method
Place pan on your stove. Once it is hot
add 3 tbsp oil,mustard seeds,channa daal.
Once they are splutter, add fennel
seeds and cumin seeds. Let them to splutter.
Now add red chilli, curry leaves, onion
and fry them till they are golden brown.
Then add tomatos, turmeric and salt and
cook the tomatoes till they are mashed finely.
Now add gram masala, curry powder, ¼
cup water and let the masala to cook for 2 minutes.
Then add egg into it and cook till raw
flavour goes away. You need to mix the egg to avoid burning. You could add 1
tbsp oil into egg at this point of time.
After cooked the egg masala for 2-3
minutes, add parata pieces into it and mix them well .
Now using your ladle just hit on the
parata mixture to make it kothu parata.

Finally add coriander leaves and serve
with mutton or chicken or egg curry and enjoy with your family.
