Kadai bhindi
is an authentic north Indian cuisine in which lady’s finger is cooked with Indian
spices and tomatoes. Great to serve with roti, chappati and rice.

Ingredients
Lady’s
finger - 350 gm [ cut into small pieces]
Ginger and
garlic paste – 1 tbsp
Onion – 1 [finely
chopped]
Curry leaves
– 1 spring
Tomato – 4 finely
chopped
Coriander and
cumin seeds – 1 /2 tbsp each [ grind them coarsely]
Turmeric powder
– ½ tsp
Kitchen king
masala – 1 tbsp
Note – use coriander
powder, cumin powder, garam masala instead of kitchen king masala.
Oil -3 tbsp
Capsicum or
bell pepper – ½ [cut into cubes]
Oil for
frying lady’s finger
Method
Deep fry you
lady’s finger and capsicum in oil and keep it aside.
Now place
pan on your stove and add oil. Once it is hot, add coriander and cumin seeds.
Then add
ginger, garlic paste and saute them till raw flavour goes away.
Add curry
leaves and onion and fry them till they turn nice golden brown.
Add
tomatoes, turmeric powder and kitchen king masala into it. Add salt, mix them
well and cook for 10 minutes.
You could
add little bit water to avoid burning.
Now add
fried lady’s finger, capsicum and cook them or another 10 minutes in low flame.
