Aloo gobi masala
Aloo gobi masala is my favourite dish which I always prepare whenever I feel like to eat some thing spicy. It is a great dish to take with Rice or Roti.

Ingredients
Cauliflower –
½ flower [ cut them into small florets]
Potato -
2 [ Cut them into small cubes ]
Onion -
1 [Finely chopped]
Curry leaves - 1 sprinng
Coriander
leaves -
for garnishing
Kitchen king
masala - 2 tbsp
Garam
masala - 1 tsp
Turmeric
powder – ½ tsp
Mustard
seeds, cumin seeds, fennels seeds and pepper corns – ½ tsp each
Oil – 3 tbsp
Salt to
taste
Method:
Blanching cauliflower:
Place sauce
pan on your stove, add 3 cups of water,1/2 salt and ½ turmeric powder.
Bring it to
boil and add cauliflower florets into it and cook for 40 seconds.
Then
transfer the blanched cauliflower into plate.
Note: We
need to do this to remove bugs and worms in cauliflower
Cooking
Now Place
pan on your stove and add 3 tbsp of oil into it.
Once it is
hot, add mustard seeds. Once they splutter, add cumin seeds,pepper corns,fennel
seeds.
After they
all are splutter, add curry leaves and onion and sauté them till they turn into
nice golden brown,
Then add
potato and cauliflower and mix them well and cook for 2 minutes.
Then add turmeric,garam
masala,kitchen king masala ,salt and mix them well.
Sprinkle
little bit water and close it with tight lid which should cover the cauliflower
and potato very closely. This way helps to cook the veggies quick.
Cook this
masala for at least 15 minutes. In between every three minutes sprinkle little
bit water to avoid burning.
Don't add so
much of water at first. Sprinkle little bit in small interval.
After 15
minutes, Add coriander leaves as garnishing.
Thats all
you are done with masala.Transfer it to bowl and serve with hot steamed rice or
chappati,roti , puri etc.
Even you can
stuff them with dosa,samosa,spring roll,bread sandwich etc. It taste amazing.
