Today’s recipe is Potato cauliflower sandwich with whole wheat bread. It is perfect recipe for breakfast, lunch or dinner. Since Sandwich recipes are most requested recipe in my channel I have decided to share atleast one sandwich recipe every month. So lets see the ingredient list for this delicious healthy sandwich

Ingredients                                           
Potato – 1
Cauliflower – ¼ size
Olive oil – 3 tsp
Mustard seeds – ½ tsp
Channa dal – ½ tsp
Ginger – ½ tsp chopped
Onion – 2 tbsp chopped
Capsicum – 1 tbsp chopped
Turmeric – ¼ tsp
Garam masala – 2 tsp
Coriander leaves – 1 tbsp chopped
Wholemeal bread slices – 4
Butter – 1 tsp
Tomato ketch up – 1 tsp
தேவையான பொருட்கள்
உருளைக்கிழங்கு - 1
காலிபிளவர் - ¼ அளவு
ஆலிவ் எண்ணெய் - 3 தேக்கரண்டி
கடுகு - ½ தேக்கரண்டி
கடலைபருப்பு - ½ தேக்கரண்டி
இஞ்சி - ½ தேக்கரண்டி நறுக்கியது
வெங்காயம் - 2 tbsp
குடை மிளகாய் - 1 tbsp
மஞ்சள் - ¼ தேக்கரண்டி
கரம் மசாலா - 2 தேக்கரண்டி
கொத்தமல்லி இலை - 1 tbsp
Wholemeal ரொட்டி துண்டுகள் - 4
பட்டர் - 1 tbsp
Tomato ketch  up – 1 tbsp

 
Method:



Steam cook or boil potato and cauliflower till they are completely cooked. Grate the cauliflower and slice the potato into ¼ size. [ Slice them into round shape like we cut for potato chips]








Place pan on your stove, add 2 tsp oil. Once it is hot, add mustard  seeds.
Once splutter. Add channa dal.
Add Ginger and sauté till raw flavor goes.
Add onion and capsicum along with turmeric and 1 tsp garam masala powder.
Mix them all well together and add grated cauliflower  and  chopped  garam coriander leaves.
Add salt to taste and sauté for two minutes. Transfer into another bowl.






To the same pan, add remaining 1 tsp oil along with salt and 1 tsp garam masala powder.
Keep the flame low and shallow fry the sliced potatoes  for 2 minutes both side till they are light golden brown.
Switch off the flame and our stuffing for sandwich is ready.
Now apply butter  one side and ketchup to other side of the bread slices.
Place cauliflower stuffing and sliced potatoes to one bread [ketchup side] and cover it with another bread. Make sure that butter applied part is facing outside.






Preheat your toaster and toast till golden brown and crisp. Watch video for better understanding.
If you don’t have sandwich toaster. Toast the bread slices on tawa and stuff with cauliflower and potato stuffing. You could watch my video named carrot sandwich for better understanding.

Traditional Adai [ Dal and Rice crepe]

Adai is a very traditional south Indian recipe made from dals, lentil and rice batter along with some Indian spices. Since it is made with varieties of dal it is protein rich and very nutritious healthy recipe.

Ingredients
Idli rice – 2 cups
Split moog dal – ¼ cup
Channa dal- ¼ cup
Urad dal – ¼ cup
Tood dal – ¼ cup
Fenugreek seeds – 1 tbsp
Salt to taste
Onion chopped – 1
Coriander leaves – 3 tbsp chopped
Spices to Grind
Ginger – 1 inch size
Garlic – 3 pods
Fennel seeds – ½ tbsp
Cumin seeds- ½ tbsp
Curry leaves – 2 spring
Hing – ½ tsp
Red chilli – 3
தேவையான பொருட்கள்
இட்லி அரிசி - 2 கப்
பாசி பருப்பு - ¼ கப்
கடலைபருப்புகப்
உளுத்தம் பருப்பு - ¼ கப்
துவரம் பருப்பு - ¼ கப்
வெந்தயம் - 1 Tbsp
 வெங்காயம் நறுக்கியது - 1
கொத்தமல்லி இலை - 3 Tbsp நறுக்கியது
உப்புto taste
Spices to Grind
இஞ்சி - 1 அங்குல அளவு
பூண்டு - 3 பல்
பெருஞ்சீரகம் விதைகள் - ½ tbsp
சீரகம், ½ tbsp
கருவேப்பிலை - 2 கொத்து  
பெருங்காயம்  - ½ தேக்கரண்டி
சிவப்பு மிளகாய் - 3
Method
Take rice and dal in separate bowl. Wash in clean water two times and soak in water for 3 hours.
After 3 hours, using wet grinder or blender blend them into smooth batter like idli, dosa batter.
Note : First grind dals. Once it is grinded well, then add rice. Because dals and lentils take long time if added along with rice altogether.
Grind the spices listed under ‘ spices to grind’ in blender and keep it aside.
You may also blend them along with dals and lentils as well. Make sure  to chop ginger and garlic finely.
Now add the spice paste to the batter [ if you did not blend with dals and rice] and mix it well.
Adai batter is ready. Allow it to ferment for 8 hours. Some people make without fermenting the batter. But when you ferment the texture and flavor would be great.
After fermenting for 8 hours, take required amount of batter in separate bowl. I took around 1 cup of batter.
Add salt, onion and coriander leaves .
Preheat your tawa and spread half of the batter very slowly as thin as possible. Since we have added onion you cannot spread very thin but try your best to spread thinly.
Pour 1 tsp oil [ coconut oil tastes really great with adai]. Cover with lid and cook for 2 minutes till bottom part become golden brown. Then flip to next side and cook for another 1 or 1and 1/2 minutes till golden brown and your adai is ready.
Transfer to plate and serve with coconut chutney and sambar.
Strong chutneys like mint, coriander, onion and tomato chutneys wont taste great with this adai as we have added lot of spices in the Adai batter. So mild chutney like coconut chutney tastes great or you may prepare avial as well.

Oats Upma 


We all know that oats are nutritious and good for health. Especially when you are trying to lose weight and also for diabetics. So there are so many dishes that you can prepare with oats. Instead of trying the same oats porridge try this oats upma and we will see other interesting recipes like oats dosa,oats idli, panniyaram , oats cookies,oats wholemeal bread, oats pav bread etc.

Ingredients

Oats - 1/2 cup
Ovile oil - 1 tbsp
Mustard seeds - 1/2 tsp
Channa dal - 1/2 tsp
Zeera - 1/4 tsp
Ginger - 1/2 tsp chopped finely
Onion - 1/2 cut into lenght wise
Curry leaves - 1 sprig
Red chilli or green chilli - 1
Carrot - 1/2 chopped
Green peas - 2 tbsp
[Feel free to use any other veggies of your choice]
Water - 300 ml
Salt to taste.
coriander leaves - for finishing around 1 tbsp chopped

Method

Place pan on your stove, keep flame at low and dry roast oats for 3-4 minutes till you get nice aroma.
Transfer into seperate plate.
Into the same pan, add oil . Once it is hot add mustard. Allow to pop  up.
Then add channa dal and fry till golden brown.
now add cumin seeds along with ginger and fry for 1 minute.
add onion curry leaves and red chilli and fry till onions are transparent.
Add vegetables and water and bring it to rolling boil.
Once the vegetables are cooked well, add oats and cook till water is absorbed and reached desired consistency. 

Oats usually dont take lot of time to cook. So it will get cooked with the water we have added.
Finally finish it with chopped coriander leaves and serve it with coocnut chutney and sambhar.

Idli Powder or Idli podi recipe or gun powder 

Idli podi or idli powder is a kind of spice powder  made from dal and it is perfect accompliment to serve with any kind of south Indian Breakfast recipes like Idli, Dosa, Uttapam, paniyaram. Since it is consist of dals and spices they are rich in proteins as well.

Ingredients

Channa dal – ½ cup
Urad  - 1/2 cup
Pepper corns – 1 tbsp
Fenugreek seeds – 1 tsp
Coriander seeds – ½ tbsp [ crush them coarsely for quick roasting]
Sesame seeds – 1 tbsp
Garlic – 3 chopped finely
Curry leaves – some
Hing – ½ tsp
Salt to taste
Jaggery – ½ tbsp [ optional]

Method

Place pan on your stove and add channa dal , urad dal.
Dry roast for 4 minutes till they are slightly warm.
Add pepper corns,fenugreek seeds,coriander seeds, garlic, curry leaves, hing, sesame seeds and dry roast for another 7 minutes till they are roasted completely.
After 7 minutes of roasting you will get nice aroma and also the dals are light brown in its colour.



If you press chilli, garlic and curry leaves they should break. Till that point you need to roast them.

Roasting garlic perfectly is very important otherwise this powder will spoil soon. If you are not sure about roasting with dals, then roast them separately and add to dal. To know whether it is roasted or not try to bend garlic it should hard and break. Should not be soft.





















Now transfer the content into separate plate. Once it is cooled blend them into fine powder. If you feel it is coarse, then sieve and then grind the big particles again in blender. Now finely ground idli powder is ready.
Transfer into air tight container. Stay fresh for 3 weeks. Keep refrigerated to use them for 3 months or more.

This powder will come handy when you don’t have any sambar or chutney or if you are lazy to cook . Serve it by mixing them in coconut oil or sesame oil or even with melted ghee
