Idli Powder or Idli podi recipe or gun powder 

Idli podi or idli powder is a kind of spice powder  made from dal and it is perfect accompliment to serve with any kind of south Indian Breakfast recipes like Idli, Dosa, Uttapam, paniyaram. Since it is consist of dals and spices they are rich in proteins as well.

Ingredients

Channa dal – ½ cup
Urad  - 1/2 cup
Pepper corns – 1 tbsp
Fenugreek seeds – 1 tsp
Coriander seeds – ½ tbsp [ crush them coarsely for quick roasting]
Sesame seeds – 1 tbsp
Garlic – 3 chopped finely
Curry leaves – some
Hing – ½ tsp
Salt to taste
Jaggery – ½ tbsp [ optional]

Method

Place pan on your stove and add channa dal , urad dal.
Dry roast for 4 minutes till they are slightly warm.
Add pepper corns,fenugreek seeds,coriander seeds, garlic, curry leaves, hing, sesame seeds and dry roast for another 7 minutes till they are roasted completely.
After 7 minutes of roasting you will get nice aroma and also the dals are light brown in its colour.



If you press chilli, garlic and curry leaves they should break. Till that point you need to roast them.

Roasting garlic perfectly is very important otherwise this powder will spoil soon. If you are not sure about roasting with dals, then roast them separately and add to dal. To know whether it is roasted or not try to bend garlic it should hard and break. Should not be soft.





















Now transfer the content into separate plate. Once it is cooled blend them into fine powder. If you feel it is coarse, then sieve and then grind the big particles again in blender. Now finely ground idli powder is ready.
Transfer into air tight container. Stay fresh for 3 weeks. Keep refrigerated to use them for 3 months or more.

This powder will come handy when you don’t have any sambar or chutney or if you are lazy to cook . Serve it by mixing them in coconut oil or sesame oil or even with melted ghee
