Tomato Pickle

                                                                                          
Whatever it is if they are homemade they are simply delicious and healthy too....From the time I started my youtube channel and blog,



 I have never shared any pickle recipes. So here is my mom version of Tomato Pickle and this pickle is something special because this is the first recipe I learned from my mom while I was working at chennai  since stayed in flat for just 2 months.  I tried this pickle with chapati as they are my favourite. Also I still remember my friends told it taste good. So here is the method.



Fortunately, it is unlimited version pickle. It means usually we serve pickle only with variety rices or curd rice. But this pickle is best to serve with any Indian main dishes like dosa,Idli, paniyaram, uttapam, roti, chapatti or simply with hot rice. Just mix with hot rice and you could take them as it is. Ingredients
Oil – 100 ml [you may add 100-150 ml ]
Mustard – 2 tsp
Hing – ½ tsp
Turmeric – ½ tsp
Curry leaves – 2 sprig
Garlic – ¼ cup cut into thin slices in round shape
Onion – 1 chopped
Salt to taste.
Tomato –  10 medium sized [ should be ripe and fresh]
Red chilli powder – 1 ½ tbsp

Method

For best taste make sure you are using fresh, ripe and pulpy tomatoes.
Chopp them finely and keep it ready.
Heat pan and add oil. Once it is hot, add mustard.



Once it is crackle, add hing,curry leaves and garlic and fry till raw flavour goes.
Add onion and turmeric and sauté till they are soft.
Add red chilli powder. Since the oil is hot, chilli powder may burn. So reduce the flame to low and immediately add chopped tomatoes and salt to taste.

Give it a stir until well-combined and cover it with lid and cook for 10 minutes.
After 10 minutes, the tomatoes must have been mashed like cravy . Now continue cooking it by constantly stirring in between for every 5 minutes to ensure even cooking without burning.

After cooked for around 30-40 minutes , you will notice that the tomatoes started to oozes out oil and it will not stick from the bottom.
Also your tomatoes must have reduced to quarter part.
It is the sign that your pickle is done. Switch of the flame and allow to cool done.


Transfer to air-tight container and it will stay fresh for more than one month in refrigerator. Make sure you are using clean and dry spoon while serving pickle for long life.
This pickle is best to serve with any Indian main dishes like dosa,Idli, paniyaram, uttapam, roti, chapatti or simply with hot rice.
