Coriander chutney
Ingredients
Garlic – 4 cloves
Ginger – 1”-1”
Onion - 1
Tomato – 1
Coconut – ¼ cup [grated]
Coriander leaves – 1 cup
Channa dal – 1 tbsp
Urad dal – 1 tbsp
Pepper corns – ½ tsp
Red chilli – 1
Tamarind – 1 tspsss
Cumin seeds – ½ tsp
Oil – 1 tbsp
Salt to taste
For seasoning
Oil – 1 tbsp
Mustard seeds – 1 tsp
Channa dal – ½ tsp
Hing - pinch
Curry leaves – 1 spring
Method:
Place pan on stove. Once
it is hot, pour 1 tbsp oil.
Once oil is hot, add urad
dal, channa dal,pepper corns, red chilli and sauté them till they turn golden
brown.
Then add cumin seeds. Once
it splutter, add tamarind and coconut, sauté them little bit and transfer
the mixture to plate and let it to cool down.
Then pour another 1
tbsp oil to pan. Add ginger, garlic, onion, tomato and cook it till they are
nicely mashed. Then add coriander leaves, mix them well.
Switch off the flame and
let the mixture to cool down.
Using blender, blend
both mixture and make paste with it.
For seasoning
Add 1 tbsp of oil, once
hot,add mustard seeds, channa dal. Once it splutter, add curry leaves , hing
and sauté till curry leaves are fried well.
Then add the seasoning
into chutney. Add salt to taste and mix them well.
Thats all. Tasty coriander
chutney is ready to eat. Serve it with idli, dosa, panniyaram, chappati, roti,
bread of your choice.
