Paneer Butter Masala


Paneer is an Indian cottage cheese made from milk and any dish made with paneer always taste great. My whole family loves paneer recipes so much especially my younger brother and my little angel vikashini. Whenever I visit India the first recipe my brother ask me to prepare is paneer butter masala and chilli paneer. There are so many varities of recipes we can make with paneer and we will learn all those recipe in next coming episodes.  Today  day we are going to watch paneer butter masala in which paneer is cooked in silky buttery tomato sauce with Indian spices with a dash of heavy cream to give richness. This recipe goes awesome with any Indian flat bread like Naan, chapati, Roti, parata. Even if you have left over you may also serve it next day with toasted bread for break fast. It taste amazing.

Cashew nuts

Paneer
150 grams
Paneer
Salt
 To taste
உப்பு
Sugar
2 tsp
சர்க்கரை
Kastoori methi
1 tbsp
Kastoori வெந்தயம்



Masala Powder


Coriander powder
½ tbsp
கொத்தமல்லி தூள்
Cumin powder
½ tbsp
சீரக தூள்
Red chilli powder
1 tsp
சிவப்பு மிளகாய் தூள்
Garam masala powder
1 tsp
கரம் மசாலா தூள் 





Preparation Grind onion in blender to smooth paste and keep it aside.  Soak cashew in milk for 20 minutes and grind it to smooth paste.  Blanch tomatoes in hot boiled water, remove skin and make into puree using blender. Homemade tomato puree – click image to watch  


Method Place pan on your stove and add oil and butter. Aloow to melt. Add whole garam masala [ cinnamon, cloves, cardamom, star anise, bay leaf and fry till you get nice aroma.




Add ginger garlic paste and sauté till raw flavor goes.  Add onion paste along with little salt to speed up cooking and cook for 3 minutes till raw flavor goes . The best way to know is the onion will turn into brown colour and started to oozes out oil.  Now add  masala powders listed under masala powder s and add little water to avoid buring. Cook for  1 minute. 

Add tomato puree with ¼ cup water. Give it mix and cook for 3 minutes till it thickens well. Add cashew paste and ½ cup heavy cream. [ If you don’t have heany cream you may also use milk ½ cup.]  Add water to adjust consistency and salt to taste and cook for another 2-3 minutes. Meanwhile fry paneer and keep it ready. You may deep fry paneer in oil or tawa fry as per your wish. But make sure you fry them till golden brown.



 
Now, your sauce is been cooking for 2-3 minutes. To the sauce add fried paneer, kasthoori methi, sugar. Give it a mix and simmer the flame.  Cook for 5 minutes and you delicious restaurant style paneer butter masala is ready.

 Add a spoon of butter and little cream on its top while serving.
