Idli
Idli is a famous south indian breakfast and dinner dish made up of rice
and lentil batter with steam cooking.
We could say it is rice cake as well. Have a look at the ingredient list

Idly rice – 3 cups
Ural dal – ¾ cup

Method:
Soak all three ingredients in water for 5 hour and then grind them to
thick batter using blender or wet grinder.
I personally recommend wet grinders to make really soft idly. Blending
or grinding results in thick paste but basically it differs.
But if you don’t have wet grinder go ahead and blend with blender.
Then ferment the grinded batter for at least 8 hours. Use a wide opened
big vessel for fermenting. Otherwise your batter may overflow.
If the climate is hot then your batter would get ferment perfectly. Else
it may take time. But 8 hour is maximum. After 8 hour you could see that
your batter must have raised up.
Now mix the batter well, transfer it into air tight container and
refrigerate it.
To make soft idly, use this batter for first four days. Later your
batter must have fermented more and you won’t get soft idly. Your idly might me
sticky.
Now whenever you want to make idly, take required amount of batter and
add salt to it. Some people add baking soda for soft idly. But if you use
quality idly rice and urad dal you don’t need any soda. You idly must be soft.

Take idly maker and add water to it. Apply oil to each concave surfaces
of idly plate. Then pour right amount of batter to each idly surface. Stack the
idly plates one by one into idly maker and place it on stove. Cook for at least
6 minutes for two idly plates. If you are stacking more idly plates, kindly
increase the time of cooking.
After 6 minutes, open the lid and using tooth pick, check your idly. If
no batter is sticking, then your idly is done. If not,cook it for some more
time.
Then let the idlies to cool down and then transfer them into hot box or
plate and serve with sambar or chutney of your preference.
Tips:
Add 1/2 cup of cooked rice or soaked poha [Aval or Rice flakes] while grinding idli rice and urad dal to make super soft Idli
